In our house, Mexican is a favorite cuisine. Frequently we eat it a couple times a week. Since we’ve learned to make some flavorful dishes ourselves, we don’t go out nearly as often as we used to. I actually prefer many of the meals we make at home to what we can get at a restaurant.

These enchiladas were new for us. They were amazing! I love the flavor of roasted poblano peppers. Definitely a new family favorite. Have them with the rice and a twisted margarita or two, and that is a fantastic meal!

Ingredients
  1. 6 poblano peppers, seeded, cut in half, roasted (broiled for 15 minutes), peeled
  2. 8 oz cream cheese
  3. 8 oz. cheddar-I use Irish cheddar or Pepper Jack
  4. 2 roasted Thai chilis
  5. 16 corn tortillas
Instructions
  1. Wiz all ingredients (except tortillas) in food processor until mixed.
  2. Preheat oven to 375.
  3. For corn tortillas to be pliable, we often find we need to put them in warm oil for a second. Immediately upon removing, we fill corn tortillas with a heaping tablespoon filling. Roll and put in baking dish. Top with La Victoria green taco sauce. Bake for 20 minutes. Add cheese and bake until melted-about 5 minutes.

Ingredients
  1. 1 cup rice
  2. 1/2 large red onion, small diced
  3. 3 cloves garlic, sliced or diced
  4. 1 lb tomatoes, diced
  5. 1/4 tsp salt
  6. 1 Tbsp. cumin, crushed
  7. 1/4 tsp. smoked paprika
  8. 1/4 tsp. black pepper
  9. 1/4 tsp turmeric
  10. 1/4 tsp salt
Instructions
  1. Sprinkle tomatoes with salt. Let sit for at least 20 minutes.
  2. Rinse rice until water runs clear. Let dry completely. Saute rice in olive oil for a few minutes-until it starts to smell nutty. Add onion and garlic and saute until onions become translucent. Add spices and cook for 1 minute. Use the juice of tomatoes as part of cooking liquid for rice (I had 1 cup tomato juice, so I added that and 1 cup water to total 2 cups liquid). Bring to boil, covered, then reduce to simmer for 18 minutes. Add tomatoes. Toss and cook for 2-3 more minutes.
